You know, Prawns & Seafood are one of the easiest to cook on a BBQ BUT they do take looking after and a little skill. Always remember that fish can be eaten raw so dont overcook them
Prawns with 'shell off' take about 45-60 seconds turning once on a medium to hot plate - peel then toss in extra virgin Olive Oil*, Tasman sea salt** and cracked pepper, sweet chilli sauce if you are a fan and onto the BBQ, loose!
'Shell on' is different, toss in EVOO then over a medium to hot grill, yes Grill, for 60 seconds turning once! take off straight away and serve, if you leave them too long after taking them off they will overcook, this is for large KING or TIGER prawns, for smaller ones cut the time by 15 seconds.
I would go into seafood more but thats for our next 'British & Australian BBQ Secrets - Vol 3' 'Seafood and Crustations'.......out next year!
remember low and slow for most seafood....DO NOT OVERCOOK SEAFOOD!!
If you get stuck or want more advice my phone is always on, hey you may be lucky and I might actually answer it! .. (except for PM Xmas Day as I will be prepping & cooking for a late Xmas family lunch!)
* We recommend 3 Drops or York Extra Virgin Olive Oil
** We recommend Tasman Sea Salt
Cheers and a Very Merry and Happy christmas to all of my budding BBQ Chefs out there, my BBQ workshops are full on for next year so come along and enjoy the fun as they are all free!!!
