Sweet chili fried West Australian Exmouth Tiger prawns.....Yummy huh? Fish is probably the easiest food to cook on a BBQ but to some the scariest! It really is a lot easier than the humble steak, unless its overcooked, which is the worst thing you can do to fish.
The photo above is made with a little York Lemon infused Extra Virgin Olive Oil (or you can use any extra virgin olive oil and add a good squeeze of lemon and mix well), a knob of butter and a couple of tablespoons of sweet chili sauce. Basically, put the oil, butter in a pan on the BBQ grill (grill on high) until the butter melts and starts to bubble, then add the prawns 5 or 6*, cook for about 45 seconds then add the sauce, turn and cook for another 30 seconds, spoon into a bowl wait for another 30 seconds as the sauce will continue cooking the prawns and serve. Tip: the sauce will be very hot so please warn your guests to be careful until cooled! Thats it!!
Although we have done this in a pan it can be cooked directly on a BBQ Plate, with a Teflon sheet. It is messier but still works, otherwise use a fry pan over the grill (on high) and again wait for the butter and oil to bubble then start cooking!..
